FRANKFORTER SAUCE also called GREEN SAUCE FOR GREEN THURSDAY

FRANKFORTER SAUCE is a traditional sauce which is mostly made on Green Thursday during Easter Time.

In Canadian Supermarket, I only could find 4 different types of herb to make this sauce. 

I had my neighbor Patrick and Debbie over. They both are from Alberta when they tried it they were very surprise how delicious and tasteful it is.




Delicious to the TASTE....

You need:

300 g of 7 different herbs

chive, sorrel, borage herb, cres, chervil (French parsley, burnet)

250 g sour cream 

250 g yogurt (plain)

1Tbl lemon

1 Tbl oil

1/2 tbsp mustard

Salt & Pepper

mix everything in a blender and let it chill for about 2 hours...

Serve your Green Sauce with potatoes

FARM DISH - BAVARIA DUMPLINGS WITH BRATWURST



A-Typical Bavarian dish......Bratwurst with home-made Semmelknoedel
Over the weekend I love to cook FARMER Dish. My husband has to work every weekend and this weekend it rained again. Now, he is home... it is unbelievable the sun is out.

The BC weather is sometimes unpredictable....





Here are my Semmelknoedel:



If you like this dish without meat....prepare a mushroom sauce....I added sour creme on top of the sauce.... 

Delicious to the TASTE

To get the best result put them in the freezer about 30 mins before you add them in hot salt water for about 30 mins. only stem no boiling.

Here are the ingredients:

5 rolls, dice them 

250 ml milk ( I used Almond milk)

2 eggs

parsley about 2 tbsp

salt, pepper

small onion

1 tbsp butter, I used vegan butter

In on bowl add your diced rolls, salt, pepper, and pour the milk/egg mixture over the rolls. Let them soak for about 30 mins. In the meanwhile, dice the onion and saute them in the pan with one tbsp. of butter. Set it aside.

Then pour the onion butter mixture over the soaked rolls, 2 tbsp parsley and mash everything together. If the whole thing is to soaky  just add flour to your mixture. Form your dumplings, then place them in the freezer for about 20 to 30 mins.

Use a big pot to steam your dumplings in salt water...

STARTER FOR VITAL BREAD

STARTER is the baking terminology for preparing a pre-dough.





3rd Day....


Usually, it is made out of whole wheat flour, because the sourdough gives it a nice aroma and flavor to the bread.

The starter takes its time. There are 3 phases which you have to go through (better to say the dough)....

You can use almost any flour for a starter for e.g spelt flour, whole wheat flour, you can even create a combination...

Step 1: 1 Day: 100 g whole wheat flour, 150 g water mix everything together in a bowl. Then cover it up by using a plastic bag lay on top your bowl a towel. Place it in a warm location for 24 hrs.

Step 2: 2 Day: Repeat Step 1 and again for 24 hrs.

Step 3: 3 Day: add 100 g flour and 2 tbsp water stir, cover it up as you did in Step 1 & 2 and let it rest for another 24 hrs.

Step 4: 4 Day: Use a clean jar and divide your starter in half. Refrigerate it for future breads. The other half of your starter you can create your bread...

Home made Pizza with Kale Chips


Sometimes going to a place to buy pizza is not always the best idea. Especially, you want something totally different.

I decided to add some kale on my pizza and it came out perfectly. The kale turned into kale chips and the aroma was sensational.

The dough is pretty easy and I introduced it to you many times. But, just in case, you have forgotten it.

Here it goes:

100 ml luke water

1 Tbs yeast

1 tsp sugar and salt

let sit for about 10 mins to form bubbles....

then

pour 2 cups of flour (any kind of flour you want)

add 4 Tbsp of oil

and then add your yeast water into the flour. Use a wood-spoon to stir everything and knead for about 10 mins. the let the dough proof for about 1 hour.

After 1 hour form your pizza shape and let it proof for about another 20 mins.

Done...you select your toppings....

VEGAN MUFFIN....no Eggs.. no Milk...no Butter....for my BEST Friend Denise and her Son


This Vegan Muffin Recipe is for my Vegan friend Denise and her son. Of course, I like to share this with the rest of the world, as well.

Malakai started, about two years ago, changing his diet from eating a lot of hamburgers and other fast food items to VEGAN FOOD. At the time, he was just 13 years old. Through this slowly change in his diet he managed to lost weight, got leaner, but over all he took care of his body, mind and skin. I thought for a young teenager being so responsible in utlize his own health to another level was for me just amazing. 

I am not only proud of Malakai I have veneration for his arbitration, discipline and his believe that he is able to change something in his life. HE DID!

It is great to learn from young teenagers or even from our own children. This helps us to follow our inner wishes and desires which we have for ourselves. So, if you want to change something in your diet....do it slowly, have patience, believe in yourself and ask a friend to join you. 

Now, to my MUFFINS with no milk, no eggs and no butter:

Vegan basic recipe for many other good things like cake, muffins...




Only 180 kcl.....Delicious to the TASTE....Mmmmmmmmmh





You need: heat up the oven to 180 C or 351 F

250g Spelt flour

200 g Sugar ...I choice icing sugar

2tsp baking soda

1/2 tsp vanillia

a pinch of salt

50 ml neutral oil

100 ml Sojamilk

150g Sojayoghurt

1 -2 tlsp  vinegar


Step 1:

Mix all the dry ingredients together and add the wet ingredients to the dry. Use a whisk to stir and divide the dough into you muffin baking form

Step 2:

Bake them between 15 to 20 mins. 

Let them cool and decorate your muffins they you like it.
