Chicken Belly filled with Swiss Chard and Ricotta - Slim Down Recipe

This is going to be the start off my slim down week # 1....

For dinner: I had stuffed Chicken Breast with Swiss Chard and Ricotta. Easy prepare and saves time as well.

My husband had the same with fried potatoes. On top of the chicken I brushed spicy Southwest Chipotle, but should that be to hot for you just leave it off...


Bake the chicken in the oven on 450 F/250 C or until done




Delicious to the TASTE!

This is what you need:

1 cup of Swiss Chard or Spinach ...you need to blanch the veggie, then chopped it up and added to the ricotta


4Tbsp.



Mix everything well in a bowl, add Salt, Pepper & Red Pepper


Then stuff your chicken or fish...whatever you love to eat 


Voila....DONE!

SO, I SAID ENOUGH  IS ENOUGH!

I WENT THROUGH MY OWN LIBRARY AND FOUND THIS GREAT BOOK WHICH I PURCHASED LAST YEAR:

This is a nice and fast recipe which can be change instead of chicken you could use firm tofu:


under 230 calories!


Here is the recipe:

1 hollowed-out tomato

1/2 cup cooked chicken, shredded

2Tbsp. mayonnaise, if you do not like mayonnaise use olive oil 

1/2 sliced scallion

1 Tbsp. chopped cilantro or other type of herbs

1 tsp. lime juice

Pinch of garlic powder

Pinch of cumin

Pinch of red pepper

Salt & Pepper


Add all the ingredients in a bowl mix it well and fill your tomato. Done!

WE BOUGHT SALLY FOR OUR YOUNGER SON LIAM IN JULY 10/11, 2011 AS A PUPPY IN LANGLEY.

SALLY WAS BORN ON APRIL 23RD, 2011 AND WILL BE 4 YEARS OLD. WE DECIDED TO BREED HER SINCE SHE IS SO BEAUTIFUL. FINALLY, WE FOUND A STUD THROUGH OUR NEIGHBOR WHO TAKE SALLY OUT FOR A SATURDAY HIKE ON MT. THOM

SHE LOVE BOTH OF THEM AND THEY ARE SO DEARLY WITH HER.

EVERY SATURDAY SHE LOOKS OUT OF THE WINDOW AND WAITS FOR THEM AND WHEN SHE SPOTS THEM SHE RUNS DOWN THE STAIRS .....I MUST SAY SHE FLIES DOWN THE STAIRS JUST TO GET TO THEM.

THESE PEOPLE ARE VERY SPECIAL TO HER AND IT IS A JOY FOR ME TO SEE THEM BEING HAPPY.

PATRICK IS MY NEIGHBOR WHO IS REALLY CRAFTS. HE MADE OUT OF A WOOD BLOG WHICH I COLLECT FROM THE WOODS LAST YEAR A NICE PLATE.

DEDICATION FOR THE CHEHALIS FIRST NATION ....CHEHALIS RIVER BY AGASSIZ

Chehalis waterway is around 31 km. It has perfectly clear water I think for me the water is truly icy. The Cheahlis River runs into Harrison River. There is a little stopping zone where we stopped and strolled along a little way until we went to a pleasant minimal sandy shoreline region.

A LITTLE HISTORY ABOUT THE CHEHALIS FIRST NATION:

The Chehalis First Nation or Chehalis Indian Band/ʃəˈheɪlɨs/ is the band legislature of the Sts'Ailes individuals, whose regions lie in the middle of Deroche and Agassiz, British Columbia.[1] The Sts'Alies are a Halqemeylem-talking individuals however are unmistakable generally and politically from the encompassing Sto:lo peoples.

My older son attended the Chehalis High School. He learned a lot about their language and culture. We are very proud to live in their country.

A Birthday Field Trip with my Husband April 9th 2015

This was a GREAT Day on my spouse's Birthday we went to numerous wonderful and obscure spots, to us, in Fraser Valley...British Columbia, Canada

We began at Chilliwack, where we live and headed to Harrison Hot Spring and Agassiz. There we discovered a little shoreline on First Nation Chehalis, the Chehalis River and a little strolling way which prompts a deadlock circular drive.

The water had an astounding green shading , clear and a new sound look.

I took some excellence photos of our visit and would love to impart them to you.Before we made a beeline for Harrison Hot Spring we incidentally through by at "The BACK PORCH" were my spouse and me quickly felt in adoration with this lovely setting and cherishing individuals Dan and Lynda.

Dan has more than 10 years of Roaster knowledge. He was searching for another employment experience while he broiled his own espresso he had this splendid thought to turn into an  Artisan Coffee Roaster. The old antic Flame Roaster which is from the 1919 upheld his awesome, superb aroma.

My spouse and me drank some crisp fermented coffee .....ooooooooOOOOHH..... we cherish it!

FAMILY EASTER ......... WISHING ALL MY READERS A BLESSING EASTER 2015


IT WAS GREAT TO HAVE OUR SON OVER FOR OUR FAMILY EASTER DINNER...

I JUST FEEL SO HAPPY WHEN MY FAMILY IS GATHERING TOGETHER FOR THE HOLIDAYS. EVEN OUR SON IS 19 YEARS OLD HE LOVES TO GET HIS EASTER BASKET WITH HIS GOODIES IN THERE.

FOR DINNER I ORDERED A ORGANIC FARM FED CHICKEN MADE BAVARIAN DUMPLINGS, GREEN BEANS WITH GARLIC CRUSHED TOMATOES AND FOR DESERT WE HAD BROWNIES...
