FARMER Breakfast or Fast Snack

Hearty Breakfast or in between Snack for your hard working husband brings a smile on his face..

Here are the ingredients: 2 portions

300 g potatos

1 medium onion

Bacon

40 g coconut oil

4 eggs

4 tbsp. milk or coconut milk

Season: salt, pepper and cive (if you like)

Part 1

Peel and cut the potato in round shape.

Cut onion and bacon in dice

Part 2

Add 20 g coconut oil in the pan and half of your potato fry them until they are golden brown. Add half of your onion and bacon to your potatos. Salt and Pepper.

Part 3

Use a bowl and add 2 eggs, and 2 tbsp, of milk, salt and pepper (lightly), and pure it over the potatos.
On low heat cook the egg-milk mixture until curdle ...Garnish with parsley or chive...




Done!

POTATO SOUP for cold and rainy days

Potato soup for cold and rainy days gives you a feeling of being a kid again or visiting grandparents in the fall...

Here are the ingredients: 6 portions

1.5 kg floury potato (russet)

2 bouquet garni

200 g bacon or a spicy sausage

250 g onion

1 tbsp. coconut oil

1/2 l milk, I use coconut milk

1 l veggie broth

1 bayleaf

Season: Parsley, salt, pepper, sausages

Let's cook:

Part 1

Peel and cut the potatos in cubes. Cut bacon and onion in dice. 

Part 2

Saute bacon and set a side. Then put the potatos, onion and bouquet garni in the pot and braise lightly add veggie broth, milk, and bayleaf and everything lightly covered cook 30 mins. 

Part 3

Add the bacon back to the soup and season it with salt, pepper. Garnish with parsely.


Delicious to the TASTE! Mmmmm....


German LeberKaes (Meatloaf) with egg sunny side up and Fried Potatoes

Leberkaes is a specialty in Bavarie, South of Germany, Swaben and Austria...

Leberkaes can be eaten in many different ways.


  •  One way: warm it up in a microwaves and put it between to buns add mustard or ketch-up and a dill pickel...


  • Second way: Leberkaes with egg sunny side up and fried potatoes....which I made for my family...

Here are the ingredients: 3 portions

3 slices (medium) of Leberkaes

3 eggs

3 dill pickels

2 tsp. coconut oil

3 medium potatoes

1 medium onion

Let's cook:

Part 1

Fry the Leberkaes about 2 mins. on each side. Place it on a plate an set aside (maybe in your oven just to keep it warm)...

Part 2

Cut potatoes in round shape and fry them in coconut oil until they golden braun add your onions.

Set your potatoes aside...

Part 3

Fry your eggs, one by one, sunny side up, season them with salt/pepper...

....and ....

Part 4

Place the Leberkaese on a plate and garnish it with one egg sunny side up, add your fried potatoes and dill pickel...

Voila, DONE!

What is it EDAMAME?


Some of my German friends are probably not familiar with EDAMAME....I am not sure if it is so popular in Germany as it is in Canada or in Asian Countries. 

I have been away from Germany almost 6 years, so I am not up-to- date...

But what is EDAMAME....



They are immature soy beans in the pod. Edamame can be eaten row, softly saute, boiled or steam and you can serve them by adding sea salt. This type of veggie is found in asian countries like Japan, China or Taiwan etc...



Nutrient content


Edamame and all preparations of soybeans are rich in carbohydratesproteindietary fiber, and micronutrients, particularly folates,manganese, and vitamin K

BUTTER CHICKEN with EDAMAME and TSASIKI Sauce

I am a busy mum and so do you....when I came home from soccer Liam was hungry like a wolf...

I had chicken breast, edamame and yoghurt...well...and this is the outcoming of my ingredients:


Below you find the recipe....as usually...Delicicous to the TASTE! Liam was asking for MORE...






Ingredients:  2 portions

400 g chicken breast, cut in strips

2/3 cup of edamame (soy beans)

1 cup yoghurt

1/2 cucumber, peel and unseed

1 garlic clove, minced

1-2 tbsp butter

2-3 tsp. coconut oil

============================

Part 1:

slice your chicken in strips, add salt and pepper

Part 2:

heat up you pan on medium, add coconut oil and butter and place your chicken strips in the pan

stir....once the chicken strips are golden brown add your edamame, turn down the heat

Part 3:

peel your cucumber and unseed them...use a grater to grate them....
add minced garlic and yoghurt....stir... add salt, pepper and your favoured herbs.

Voila...DONE! Bon appetite!.....

LEFT OVER... Qunioa Spelt flour dough... Quinoa Spelt mini choco cupcakes

Sometimes we have left overs from cooking and in baking...

Here is what you could do....

Fall is on its way.....Red SPLIT LENTIL SOUP


There are 3 different types of lentil...

The lentil (Lens culinaris) is an edible pulse. It is a bushy annual plant of the legume family, grown for its lens-shaped seeds. It is about 40 cm (16 in) tall, and the seeds grow in pods, usually with two seeds in each.....Research: Wiki...

The nutritional factor: Protein, Vitamins: Thiamine, Riboflavin, Niacin etc...Trace metal...

So, now you know something about lentil... and let's cook!

This is what you need, however, you can modify it, whatever you have in your pantry or fridge...

Your ingredients: 4 portions

1 onion, fine diced

2 garlic cloves, fine diced

2 carrots, diced

2 potatoes, diced

2 sticks if celery, fine diced

2 smokies, fine diced (substitute for bacon or for vegan...do not add meat..)

2 tomatoes, diced

2 mushrooms

1/4 rutabaga (Steckruebe in German)

Season: salt, pepper, nutmeg (not too much), cinnamon, clover,1 tsp. balsamic vingegar, 1 tsp. A1 sauce,  1 tbsp. lemon juice, 1 tbsp. tomato mark, coconutmilk or heavy cream to the end and anything you like...

Garnish with Parsely or Cilantro...

Part 1: Dice all the top ingredients











Part 2:  1 Tbsp olive oil or coconut oil and add all your products....to saute....for about 
8 mins



Part 3: addd your Red Split Lentil to your veggies...add organic bouillon powder or veggie broth. Then add 1liter warm water... stir...




Let it come to a short boil and simmer it for 1 hour.

Part 4: Season it....salt, pepper, cinnamon, nutmeg, corinader,clover, balsamic vingegar, lemon juice, tomato mark, A1 sauce, coconut milk or heavy cream (favoured),

Gyros Salat with Hemp seeds



The Greek Gyro Dish instead as a meal I changed it to:

Gyros Salat with Hemp seeds


Here are your ingredients: 1 portion

1/4 of your favoured lettuce

1/2 cup of edamames (shelled)

1 medium tomatoes

1/2 cup of soja beans

1/2 cup pumpkin

1/2 cup chicken, beef etc. 

1 Tbsp. Hemp seeds


Part 1:

Wash lettuce, cut tomatoes in dice or 1/4, steam edamames and soja beans and dry them by using a salat spin....then place it nicley on a plate add your Gyros meat on top of it place your Hemp seeds...




Drizzel the salat with yoghurt dressing: 1/4 cup of yoghurt, 1 tsp. mustard (mild), salt & pepper, 1 tsp. balsamic vinegar...done

BEEF Gyros & TSATSIKI

Beef, Chicken or Lamb Gyros you can take any kind of meat and convert it to GYROS...that's the fun about this recipe.

Gyros is a typical greek dish. Everyone, has seen these tall vertical spit where layers of meat are hanging on there to be roasted.

Well, at home we have to find a different method it by either grill a fair amount of meat in the oven or if you have about 4 people you could use either your pan or a steak grilling pan.

Here are the ingredients for 4 portions:

900 g of your favored meat

3 garlic cloves

1/8 l olive oil

2 tsp. thyme

2 tsp. oregano

1 smal onion

Salt, Pepper

Let's start cooking:

Part 1:

Rinse meat with cold water and dab it dry. Cut it in thin layers. Crush garlic cloves, olive oil, herbs and add it to your meat. Place it for 30 mins. in fridge.

Add olive oil to the heated pan and fry first batch for it for 8 min. or until brown, then your second batch...season it with salt, pepper and herbs....Keep it warm.

The finishing touch pure the sliced onions over the meat...

Tsatsiki


Part2:

Some they use only joghurt and some mix it up with quark and yoghurt. It depends what you like or what you have at home.

If you do not like the fresh garlic you could use garlic powder. It works the same.

Ingredients:

500 g Yoghurt

2 -3 garlic cloves, minced

3/4 Cucumber

1 Tbsp Vinegar

Peel the cucumber and core the seeds. Use a grater to rub the cucumber in small pieces add them to the yoghurt. Season with salt, pepper, herbs and vinegar your Tsatsiki is done!


This is a very simple version, but if you like to add to your meat veggies then this is a second version of  Greek Gyros
I added edamames (shelled), soja bean to my Greek Gyros and it was again....
