FALL Season Quinoa with fresh Salmon and Almonds

Qunioa is a great dish for all the people who dealing with Chronic illness or who love to stay healthy...For those who never tried Qunioa this is very easy to make.


Let's start:

First you need to wash quinoa with cold water. Second let it rest for about 30 mins. and then rinse it again and place it in a pot.

1 cup quinoa and 2 cups of water ( I add broth and one clove garlic)

boil it and then turn it down to simmer for about 15 min. 

Do not over cook or under cook it does not taste to good. 

Qunioa comes in different colors. It depends what you prefer.


In your saute pan:

1 cup squash, dice

medium size of onion, dice

whole almonds (7)

little bit salt and pepper....here you could add your favor spices and give it your own personality ...spicy or mild....you could even add a nice sauce of heavy cream too... experiment...

Once squash, almonds with the onions are golden brown added RA energy food mix, but you can add only Hemp seeds or whatever you have in your pantry that day, if you like...try to be creative :)

Put it to the side and use the same saute pan for your fresh salmon

250 g ( or more for more people) fresh salmon, coarse dices

saute the salmon once it is pink add your squash and qunioa to your fish...

Schnitzel DAY - For Liam

Schnitzel is a great meal for my son Liam. When I have sometimes days were I absolutely do not know what I should cook...I just ask LIAM..."What would you like to have for dinner?"

And the answer is: "Schnitzel" you make the best Schnitzel in the whole wide World. What a compliment.

Here it is:

The secret to my recipe buy good meat: pork, veal, turkey or you can take chicken...

I ask my butcher to tender the meat which saves your time and energy. Unless, you angry about your neighbour...

For the battern: Spelt- flour, bread crumbs from left over spelt bread, organic eggs from my farmer

Use deep plates: you need 3 of those and I spice the eggs with salt and pepper, if you like you can add paprika

First start with FLOUR, EGG & SPELT BREAD CRUMBS




Then you add your coconut oil in the pan and add your Schnitzel in the heated coconut oil.
DO NOT WALK AWAY..you need to pay attention.

Once they golden brown on both sides, place them on a baking sheet and put them in the oven to keep them warm until youfinish with the rest of your dish > about 200 F to 310 F
